A great way to get children to enjoy cauliflower, and a good source of fibre and potassium.


Ingredients
1 small
cauliflower
1 can
(10 oz/284 ml) low-sodium tomato soup
3 tbsp
low-fat milk
2 tsp
13 cup
grated Cheddar cheese
Sea Salt, to taste
Black Pepper, to taste

Preparation
  1. Trim cauliflower. In a large pot of salted boiling water, cook whole head until tender crisp, about 8 - 10 minutes.
  2. While cauliflower is cooking, combine tomato soup, milk, and Vegetable Seasoning in Multipurpose Pot - 8 cup. Stir well. Bring to a gentle simmer over medium heat.
  3. Remove pot from heat, add cheese and stir well. Return pot to low heat and continue stirring until cheese melts. Season with Sea Salt and Pepper.
  4. Place cauliflower on large serving plate and pour tomato cheese sauce overtop. Serve immediately.
